4 quarts popped popcorn

1/2 c. margarine

1/4 c. corn syrup

1 c. brown sugar

1/2 tsp. salt

1/2 tsp. baking soda

Bring the margarine, corn syrup, brown sugar and salt to a boil in a heavy saucepan on medium heat.

Boil for 1 minute, stirring constantly.

Remove from heat.

Add the baking soda and mix well.

Pour over 4 quarts of popped corn. Mix with a wooden spoon to coat evenly.

Caramel corn may be served as is (for chewy caramel corn), or use one of these easy cooking methods to make crunchycaramel corn:

Microwave: Pour sticky caramel corn into a large brown paper grocery bag.

Roll down the top.

Microwave for 30 seconds.

Carefully remove the bag and shake it.

Return to microwave and cook for 90 seconds, then 40 seconds, then 30 seconds, removing the bag and shaking it well after each interval.

(The shaking is important because it keeps the popcorn from burning).

Pour caramel corn onto a cookie sheet and cool.

Oven: Preheat oven to 250 degrees.

Pour caramel popcorn into the pan.

Bake 45 minutes, turning popcorn every 10 minutes.

100% Whole Wheat Bread

Recipe for perfect bread using the Nutrimill and the Bosch Universal Kitchen Machines

v 6 cups Warm Water – 130 degrees when using SAF yeast

v 2/3 cup Oil

v 2/3 cup Honey

v 2 TBsp. L’EQUIP Dough Enhancer

v 2 TBsp. Salt

v 2 TBsp. L’EQUIP Vital Wheat Gluten

v 2 TBsp. L’EQUIP Tofu Drink Mix

v 3 TBsp. SAF Instant Yeast

v 10-15 cups Freshly Milled Whole Wheat Flour

(Use Nutrimill ™ “Normal Bread” setting

Pour water into Bosch Mixing Bowl. Then add oil, honey and salt. These ingredients will cool the water appropriately. Next add Kitchen Resource Dough Enhancer, Vital Wheat Gluten, Tofu Drink Mix, and SAF Yeast. Add 6 cups of freshly milled wheat flour on top of liquid. Turn the machine to speed 1 and continue to add wheat flour only until the dough begins to pull away from the sides of the bowl (DO NOT add too much flour). The Bosch has ample kneading power!

Set a timer and let the dough knead for 6-8 minutes. Remove dough from bowl onto counter and divide into equal portions (makes 6 – 1½ pound loaves). Put the dough into well-greased pans immediately. It will be elastic and silky in appearance. Let the loaves rise until they are double in size (this will take about 30 to 60 minutes).

Bake in preheated oven at 350 degrees for 40 to 45 minutes until golden brown, remove from pans when done, and cool on wire rack. Rub tops of hot bread with shortening or butter for shiny appearance. This same recipe can be used for rolls, pizza crust, pita bread, and cinnamon rolls.

Other Variations (add during first addition of flour):

v Honey Oatmeal: add 2 cups of Oatmeal.

v Raisin: add 2 cups of raisins.

v 7 Grain: add 2 cups of 7 Grain flour.

The Bosch Universal uses 20% less flour than making bread by hand. The dough will be sticky so you may wish use equal parts of oil and liquid lecithin, mixed, or Vegalene to grease your hands, the table, and bread pans, in order to better manage the dough.

I usually let mine just sit in the bowl covered, either way it turns out fine. Use with the lentil recipe, or for wraps!
